Today is the day I have decided to fully commit to a new and improved way of eating. Currently in my worst uveitis flareup yet, uncertain of what’s to come of it, and feeling like the next best option is to change my way of eating.
The only point in this 4 week struggle (so far) that I showed any improvement was the week I chose to eat mindfully, whole, and with no added sugar or processed foods. My eye was on the right track, but then I thought – “really? Come on. Am I really going to ‘suffer’ and cut out all of the foods I crave and binge on? No way, I’m going to eat what I want. After all, my last 2 flareups had nothing to do with food.”
Well, the inflammation came back and here I am back on a high dose of prednisone.
Speaking of binge eating… this gut healing journey extends to other areas of my health too. From being overweight, having high blood pressure, high cholesterol, kidney stones, and a serious sugar addiction… I need to make changes. In an effort to heal my gut by removing inflammatory foods from my diet, I hope to keep my immune system happy and my body well-nourished.
Here I will document my health journey and all of the wonderful meals I will be making. Let’s do this!
